This sandwich boasts Jurassic proportions of fried pork in three different forms, making it a savory salt-bomb in the best way. It would almost be too much without the combined saving grace of the banana peppers and the dill pickle mustard. Both bring a much-needed acid that cuts through the grease and fat of the fried meats with bright, tangy flavors. The Jurassic Pork is not for the faint of heart, but it is one of the better examples of times when the dice seemed to stick to a coherent theme to create a very logical, if a bit extra, sandwich. If any sandwich could be a match for the dinosaurs, it would be this one: “meatier” than the rest!

INGREDIENTS

2 slices sprouted grain bread, toasted and buttered
4–6 ounces Spam, cut into 1cm slices
2 slices bologna
2 slices Swiss cheese
1 ounce lettuce
2 ounces banana peppers
3 strips bacon
2 ounces dill pickle mustard

Tip

If your buttery is very thin, you can use two butteries instead—one as the top and one as the bottom.

INSTRUCTIONS

Fry the Spam slices until they are brown on both sides. Add the Spam in an even layer on top of one of the slices of bread.
Using the same pan, fry the bologna, browning the slices on both sides. Add the bologna on top of the spam.
Layer the Swiss cheese on top of the bologna.
Add an even layer of lettuce on top of the cheese.
Add an even layer of banana peppers.
Prepare the bacon using your preferred method. Add the prepared bacon on top of the banana peppers.
Spread a layer of dill pickle mustard on the buttered side of the other piece of bread.
Put the top piece of bread sauce side down on top of the sandwich.
Cut your sandwich in half diagonally and enjoy!
